Winemaking technique
The grapes, harvested after careful selection, are subjected to destemming, light crushing and are
cryomacerated for 12 hours.
The must, clarified by cold static decantation, is inoculated with selected yeasts and put to the
ferment at a temperature of 16 °C. in temperature-controlled stainless steel tanks.
