Production area: North-eastern part of the Province of Potenza delimited by the production regulations, in particular in the municipalities of Genzano di Lucania and Acerenza. Harvest period: End of October with slight overripening of the grapes. Harvesting method: Harvesting of the grapes by hand in crates of 12 – 15 kg and immediate transport of the same to the cellar. Vinification: Vinification in small fermenters and skin maceration at a controlled temperature from 22° to 26° C. for about 10 days, completion of alcoholic and malolactic fermentation in stainless steel tanks. Aging: In small 225-liter French oak barrels for about 12 months and in the bottle for at least 12.
Organoleptic characteristics: Wine produced only in the best vintages, of excellent quality and great structure, elegant and well balanced which presents:
Deep and intense ruby red color with slight garnet reflections.
Vinous bouquet with a delicate scent of undergrowth, characteristic and spicy.
Dry, full and consistent flavor, mineral, pleasantly tannic and velvety.
Alcohol: 14% vol.
Food pairing and serving temperature: Classic aging wine suitable with roasts, main dishes, game and aged cheeses.
It is suggested to uncork an hour before and serve at 18° - 20°C.
